My vineyards may be a bit on the haute side, but thankfully there’s nothing haute about the local cuisine.
Not that the locals take good food any less seriously than the rest of France, but here it’s fresh, local ingredients that are preferred to elaborate sauces and superstar chefs.
And why not when the area produces them in such abundance.
Thyme, rosemary, juniper and most herbs you can think of grow wild everywhere, and home-grown vegetables are to be found in most back gardens, my papa-in-law Roger's included..
Wild boar roam the hillsides and free range chickens roam their ranges. Even the fish is delivered fresh every Tuesday from Leucate about 30 miles away on the coast.
