I have always loved Fitou wines and so when I acquired some vineyards in the village of Tuchan, in the Languedoc, it was my opportunity to put my stamp on this southern french classic.
The classic recipe for Fitou is carignan, grenache and syrah. To make Jones Fitou I selected half a dozen vineyards around the village of Tuchan all bringing a different dimension to the wine. The vineyards are small plots planted with just one grape variety on a range of different soils.
